Camp Edible: Keeping it Green for Children

Camp Edible at Cabbage Hill Farm Offers Hands on Summer Farm Program for Ages 5 to 10 years. First Session: July 30th to August 10th Second Session: August 13th to August 24th

Children have a natural curiosity about the world in which they live and play. They especially like to know how, where and why things happen. The best way to nurture their curiosity is to provide them with a safe natural environment that encourages hands on participation and offers children opportunities to explore, examine and discover the world in which they live.

Imagine the possibilities of a summer program called Camp Edible. The philosophy is simple: Edible Education Project and Cabbage Hill Farm provide days of experiential activities that encourage learning through nature. In this nurturing setting, young farmers will grow to understand their role as caretakers of each other, animals and the planet.

Edible Education Project and Cabbage Hill Farm are located on nearly 200 acres in Mt. Kisco, Westchester County, New York. This setting is a working sustainable farm with interests in aquaponics, green energy alternatives, organic farming and preserving heritage livestock. Both not for profit organizations provide educational opportunities to the surrounding community. Programs are fun, informative, experiential and revisit the importance of our connection to our environment.

Camp Edible is an opportunity for children between the ages of 5 and 10 to enter the farm's gate and, for a good part of each day, experience the role of a farmer. With their straw hats on their heads, they will become a caretaker of the people, plants and animals that surround them. Programs each day will focus on organic gardening, animal husbandry and discovery. Discovery will include exploring the farm's fields, lake and landscape as well as nature inspired creative arts.

Each activity will follow the child's natural path to learning. Their elementary education will be enhanced and their spirits will soar. Learning about trees is just as important as learning how to work compassionately with others.

Breakfast and lunch is provided daily at lakeside. The "farmers" will prepare many of their meals from the garden they tend reflecting the nutritious bounty of the local season.

Drop off at the Farm gate is at 8:00 am. Upon completing their farm journals and enjoying lunch, pick up is at 1:30. On the last day of Camp Edible the "farmers" will stay a full day preparing a sunset dinner for their families. An evening of readings, displays and celebration of the season.

Camp Edible will be holding two 2-week sessions. The first session is from July 30th to August 10th and the 2nd session will be August 13th to August 24th. Full payment of $800.00 per session is required with registration. Space is limited to 25 children.
